This tray contains lemon, chocolate, raspberry, pistacio and coffee macarons.My raspberry macarons are filled with a buttercream and raspberry centre. The whole raspbarries are reduced down to make a syrup that is used to flavour my buttercream.

Because I am using whole raspberries I do not need to add any artificial colours or flavours to my buttercream filling. I do not use preservatives in any of my cakes, patisserie or confectionery so they should be kept chilled. These macarons should be taken out of the refridgerator 20 to 30 minutes before serving to develop the flavour of the filling, but are equally nice eaten chilled.
